SICILIAN SQUASH

Ingredients:

2 pounds yellow crooked neck squash
2 tablespoons olive oil
1 clove garlic -- minced
2 tablespoons wine vinegar
1 teaspoon sugar
1 teaspoon salt
2 teaspoons chopped mint leaves
 

Preparation:

Wash squash and cut into thin, crosswise slices. Heat oil in large skillet over moderate heat (about 250 F). Add squash and garlic; cook about 10 to 15 minutes, until just tender, stirring occasionally. Add remaining ingredients, cover and cook 5 minutes longer over moderately low heat (about 225 F).
