Preparation:
Cover bottom and sides of a 10 inch skillet with some of the moist lettuce
leaves. Top with peas and sprinkle with scallions, sugar, salt, pepper,
chervil, and thyme and dot with butter. Cover peas with remaining lettuce
leaves. Cover skillet tightly and cook over low heat (about 200 F) for 10
to
15 minutes, or until peas are tender. Remove lettuce leaves. Toss well
before serving. |
