Preparation:
heat oil in a skillet, over a medium flame add chicken and saute for 15 minutes, until browned on all sides remove chicken with a slotted spoon, set aside add tomatoes, onions, red pepper flakes, salt, and thyme-mix well bring to a boil, reduce heat, and simmer for 5 minutes add chicken, turn to coat well cover and simmer, over a medium flame, for 30-40 minutes, until juices run clear when chicken is pricked with a fork remove chicken to a heated serving platter skim carefully to remove fat pour pan drippings over chicken serve hot, with hot cooked rice |
