Preparation:
Mix raisins with hot water and let stand to soften. Season chicken with salt and pepper and coat with flour. Heat butter and oil in a large heavy skillet. Brown chicken evenly on all sides and remove. Add the green pepper, garlic, onions, and curry powder and saute until soft. Add the tomatoes (including juice) and bring to a boil. Add the chicken. Cover and cook about 20 minutes, turning chicken once or twice.
Drain raisins and add to the pan. Garnish with almonds. Serve with rice. |
