White Chocolate Cherry Pecan Bars

Ingredients:

1/2 cup unsalted butter -- softened
1 cup packed brown sugar
2 large eggs
2/3 cup sour cream
1 1/2 teaspoons vanilla
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 ounces white chocolate -- coarse chop
1 cup dried cherries -- or cranberries
1 cup pecans -- chopped
---TOPPING
2 ounces white chocolate -- coarse chop
 

Preparation:

In bowl, beat butter with sugar; beat in eggs, 1 at a time, beating well after each addition. Beat in sour cream and vanilla. combine flour, baking powder, baking soda and salt; gradually stir into butter mixture. Gently stir in white chocolate, cherries and pecans. Scrape batter into greased 13x9-inch cake pan; Bake in 350F 180C oven for about 20 minutes or until golden and cake tested inserted into center still has moist crumbs clinging to it. Let cool completely on rack. Topping: In top of double boiler over hot (not boiling) water, melt chocolate; drizzle over cooled cake. Cut into bars.
