Preparation:
* Please note boneless will work, but tend to get dry
Wash and trim chicken breasts; sprinkle with paprika, basil, salt, and pepper. Combine next 5 ingredients; spread mixture on chicken. Preheat oven to 375. Spray a large (2 3 quart) oval baking dish with Pam. Place carrots on the bottom of the pan, add broccoli, then zucchini. Place chicken bone side down on top of vegetables. Cover with onion slices and sprinkle lime juice over it all. Bake 45 minutes or until chicken is done. If you re in a real hurry, you can buy the vegetables already cut up (or frozen) and have dinner ready in a flash! |
