Preparation:
combine chicken, egg whites, garlic, ginger, soy sauce, wine, vinegar, sugar, sesame oil, scallions, and cornstarch cover and chill for 1-24 hours heat 1/2 cup peanut oil in a wok, over a moderately-high flame add one-fourth of the chicken mixture stir-fry for 3 minutes remove to a heated serving platter, keep warm repeat until all of the chicken mixture has been stir-fried heat remaining oil to 370-375 degrees add cashews and fry for 2 minutes, until just lightly colored drain on paper towels arrange on top of chicken serve hot |
