Ingredients:

2 tablespoons oil
2 medium carrot -- minced
2 medium scallion
1 pound beef -- shredded
5 ounces tofu -- in 1/2 inch cubes
3 ounces spinach
2 tablespoons sugar
4 tablespoons soy sauce
4 large eggs
1/2 teaspoon salt
 

Preparation:

1. Heat oil and saute carrots, add green onions. 2. Add beef and brown. Add tofu, spinach, salt, sugar and soy sauce. 3. Cook on low heat; beat eggs and add to mixture. 4. Cook and stir five minutes; serve on steamed rice.
