Preparation:
separate joints of chicken wings, set aside combine black beans and 1 tablespoon water, mash to a paste, and set aside heat oil in a wok, over a moderate flame add ginger and garlic and stir once add wings, heat and stir for 3 minutes, until lightly browned add soy sauce and wine, heat and stir for 3 minutes add black beans, stir once reduce heat, cover, and simmer for 8-10 minutes remove cover heat and stir over a moderately-high flame until liquid had reduced to nearly nothing and chicken is glossy remove from heat sprinkle with msg and pepper combine wings with sesame seeds and scallions-toss to coat well serve hot |
