Beef and Bean Burritos

Ingredients:

1/2 pound lean ground beef or turkey
1/2 cup green onions -- sliced
1/2 cup jicama -- chopped
2 cloves garlic
1/4 cup water
4 teaspoons chili powder
1 tablespoon unsweetened cocoa powder
2 teaspoons sugar
15 1/2 ounces pinto beans -- rinsed and drained
1/2 cup frozen whole kernel corn
2 tablespoons diced green chili peppers -- drained
10 tortillas flour tortillas
1 cup cheddar or Monterey Jack cheese -- shredded
1 medium shredded lettuce
1 jar salsa
1 Cup sour cream or plain yogurt
1 bunch thinly sliced green onions
 

Preparation:

For filling: In a large skillet cook ground beef or turkey, green onion, jicama, and garlic until meat is brown and onion is tender. Drain off fat. Stir in the water, chili powder, cocoa powder, and sugar. Cook for 2 minutes. Remove from heat. Stir in beans, corn, and chili peppers. Stack tortillas; wrap tightly in foil. Heat in a 350 degree oven for 10 minutes to soften before filling. When ready to fill tortillas, remove only half at a time, keeping the others warm in the oven. Spoon a generous 1/2 cup filling onto each tortilla just below the center. Top each with a generous tablespoon of cheese. Fold the bottom edge of the tortilla up and over the filling just to the center until the filling is covdred. fold in the opposite sides of each tortilla just until they meet. Roll up tortillas from the bottom. Secure bundles with wooden toothpicks. Arrange burritos on a baking sheet. Bake in a 350 degree oven for 10 to 12 minutes or until heated through. Remove toothpicks. Serve burritos on lettuce with salsa, sour cream or yogurt, and green onion.
