Preparation:
Boil sweet potatoes in skins until tender (pierces easily with a fork). Peel and set aside. Prepare pastry crust. In large bowl, beat eggs slightly; add sugar, salt and spices; mix well. Mash potatoes and mix in other ingredients. Stir in evaporated milk and pour into crust. Bake at 425 degrees for 15 minutes. Reduce heat to 375 degrees; bake for 30 minutes or until thin bladed knife inserted comes out clean. |
