Preparation:
1. Heat oil in a deep fryer to 350F (180C)
2. Combine dry ingredients with fork.
3. In a separate bowl combine ggs, corn, milk and olive oil; whip.
4. Add peppers and onion to egg mixture; mix well.
5. Fold the wet mixture into the dry mixture.
6. Using a wet TSP, drop the batter by spoonfuls into the hot oil.
7. After about 1 minute, flip and allow to cook for 1 more minute until they rise and are golden brown.
8. Drain on paper towel and serve with hot sauce. |
