Preparation:
Beat eggs slightly add 1/2 of sugar and beat 10 minutes. Cook remaining sugar, flour, milk, butter, and vanilla over medium heat. Add to egg mixture, add coconut, leaving some to sprinkle on top.
Spread in unbaked pie shell and sprinkle coconut on top. Bake at 350 degrees for 1 hour. This browns nicely on top and needs no meringue or other topping. |
