Buttermilk Lemon Pie

Serves: 9 inch piecrust
 

Ingredients:

3 large eggs
1 1/2 cups sugar
1/2 cup buttermilk
3 tablespoons butter -- melted
1 tablespoon all-purpose flour
2 tablespoons lemon juice
1 teaspoon lemon extract
1 crust unbaked 9 inch pastry shell
 

Preparation:

Beat eggs; add next 6 ingredients, and mix well. Pour into pastry shell. Bake at 425 F for 10 minutes; place foil over edges of crust, and bake 5 to 10 minutes longer or until set. Let cool on a wire rack.
