Orange Pound Cake

Ingredients:

1 spray vegetable cooking spray
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 large orange
1 cup sugar
1/2 cup buttermilk -- at room temperature
1/2 teaspoon vanilla extract
1/4 cup butter -- no substitutions
1 large egg
2 large egg whites
1/4 cup honey -- optional
 

Preparation:

1. Heat oven to 350øF. Lightly coat a 9x5-inch loaf pan with vegetable cooking spray. Sift together flour, salt, baking powder and baking soda in medium bowl; set aside. 2. With vegetable peeler or small, sharp knife, remove peel from orange; coarsely chop the peel. Cut orange in half and squeeze 1¦4 cup juice. Process sugar and peel in food processor, pulsing until peel is finely chopped. Combine buttermilk, orange juice and vanilla in a glass measuring cup. 3. Beat butter and orange-sugar mixture in a large mixer bowl on medium-high speed until combined. Beat in egg and egg whites, 1 at a time, beating well after each addition. At low speed, add flour mixture alternately with buttermilk mixture, beginning and ending with dry ingredients. 4. Spoon batter into prepared pan. Bake 40 minutes, until toothpick inserted in center comes out clean. Cool cake in pan 15 minutes; invert and remove pan. Cool. Cut into 12 slices. Serve each slice with 1 teaspoon honey, if desired. Notes: Yes, you can have dessert on a diet. And no, it doesn't have to be a plain piece of fruit. For the times you crave something a bit more special, try this orange-scented pound cake.
