Cheddar Cheese Soup

Ingredients:

1 cup milk
1 cup chicken broth
1/4 teaspoon salt
2 tablespoons cream of rice
1 dash yellow food coloring -- optional
1/2 cup shredded mild cheddar cheese
 

Preparation:

Combine milk, chicken broth and salt; scald. Sprinkle in cream of rice and cook, stirring constantly, for 1 minute. Remove from heat, cover and let stand 4 minutes. Stir in cheese, heat until melted. If desired add a drop of yellow food color. If desired, beat with an electric of hand beater or whir in a blender until smooth. Heat and serve.
