Preparation:
combine scallops, water, salt, and white pepper in a saucepan, over a high flame heat to a boil, reduce heat, and simmer for 10-12 minutes, until tender remove scallops with a slotted spoon, set aside heat butter in a skillet, over a medium flame add onions and saute for 5-6 minutes, until softened whisk in flour, heat and whisk until bubbly gradually whisk in reserved liquid from scallops stir in cream, parsley, and scallops season to taste with additional salt and white pepper heat thoroughly over a low flame, without boiling pipe a border of mashed potatoes onto each serving dish broil briefly to lightly brown tops ladle scallop mixture into each serving dish combine breadcrumbs and cheddar cheese top scallop mixture with cheese mixture pass under broiler briefly just to melt tops serve hot |
