Poached Fish

Ingredients:

2 pounds fish fillets or steaks
1 medium onion -- sliced
2 stalks celery -- chopped
2 medium carrots -- chopped
2 teaspoons salt
1/4 teaspoon pepper
4 Cup water -- to cover
 

Preparation:

Put fish in single layer in large fry pan. Add vegetables and seasonings. Cover with water. Bring to boil, cover, simmer slowly 5 to 10 minutes until fish flakes easily. Makes about 4 cups cut up fish.
