Limed Snapper

Ingredients:

1/3 cup scallions -- chopped
2 tablespoons butter
2 medium ripe tomatoes -- chopped
3 tablespoons fresh lime juice
2 tablespoons green chiles -- chopped
1 tablespoon parsley -- chopped
1/8 teaspoon salt
1/8 teaspoon garlic salt
1/8 teaspoon white pepper
1 pound red snapper fillets
6 slices lime wedges
 

Preparation:

1. Saute scallions in butter until tender. 2. Add remaining ingredients except snapper and lime wedges; bring to a boil. 3. Reduce heat; simmer 10 minutes. 4. Put snapper in sauce; spoon sauce over fish. Cover and simmer 10 minutes, or until fish tests done with fork. 5. Serve on heated platter surrounded by lime wedges. NOTE: A terrific main dish served with bed of brown rice spiked with pimiento!
