Preparation:
1. Saute scallions in butter until tender.
2. Add remaining ingredients except snapper and lime wedges; bring to a boil.
3. Reduce heat; simmer 10 minutes.
4. Put snapper in sauce; spoon sauce over fish. Cover and simmer 10 minutes, or until fish tests done with fork.
5. Serve on heated platter surrounded by lime wedges.
NOTE: A terrific main dish served with bed of brown rice spiked with pimiento! |
