Baked Halibut With Herbed Dressing

Ingredients:

2 cups dried bread crumbs
1/4 cup parsley -- chopped
1 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon sage
1/2 teaspoon rosemary
1/4 cup butter or margarine
1/2 cup onion -- chopped
3/4 cup celery -- chopped
2 tablespoons vinegar
2 tablespoons water
2 pounds halibut steak -- 1 1/2 inch thick
2 slices lean bacon
---EGG-MUSTARD SAUCE---
3 tablespoons butter or margarine
2 tablespoons flour
1 1/2 cups milk
3/4 teaspoon salt
1 dash red pepper
1 tablespoon prepared mustard
2 large hard-cooked eggs -- diced
 

Preparation:

1. Combine bread crumbs, parsley, salt, pepper, sage and rosemary; set aside. 2. Melt butter; add onion and celery, sauteing until tender. 3. Add vinegar and water; heat. Pour liquid over bread crumbs and toss lightly. 4. Place mixture in bottom of greased baking dish; place halibut on dressing and top with bacon. 5. Bake, uncovered, in preheated 350 F. oven, 40 minutes, or until fish flakes with a fork. Serve with Egg-Mustard Sauce. Egg-Mustard Sauce 1. Melt butter; blend in flour. 2. Gradually add milk, salt, red pepper and mustard; cook, stirring often, until sauce thickens. 3. Fold in eggs. Serve hot.
