SWEET POTATO CORNBREAD WITH CORN and GREEN CHILIES

Ingredients:

1/2 cups applesauce
1/4 Cup brown sugar
3 large egg whites
1 tablespoons orange juice
1 Cup mashed sweet potatoes (or canned, mashed) cooked
1/2 Cup skim milk
3/4 Cup corn meal
3/4 Cup unbleached flour
1 tablespoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon salt
1/2 Cup fresh or defrosted corn kernals
4 ounces canned chopped green chilies
 

Preparation:

Preheat oven to 350 F. With electric mixer, beat egg whites until fluffy. Add brown sugar, and blend well. Add applesauce, orange juice, sweet potatoes, and skim milk. Add dry ingredients and mix well. Fold in corn and green chilies (batter will be thick). Divide mixture into two 9-inch pie pans coated with nonstick spray. (This comes out thin. You could probably pour the batter into 1 pan if it had reasonably high sides.) Bake until tester comes out clean when inserted into the center, about 15 minutes. Remove to rack and cool.
