Meatless Mincemeat

Ingredients:

1 medium seeded orange
1 medium seeded lemon
1 1/2 cups golden raisins
1 1/2 cups currants
8 medium tart apples
3/4 Cup mixed candied diced fruit peel
1 3/4 cups apple cider
3 1/2 cups firmly packed dark brown sugar
1 teaspoon salt
1 1/2 teaspoon powdered coriander -- cinnamon, allspice,mace, nutmeg and cloves
1 teaspoon Brandy or whiskey -- optional
1 teaspoon Rum or sherry -- optional
 

Preparation:

Using the coarse blade of a food chopper, grind cut up seeded orange and lemon (with rinds)and raisins, currants, cored but unpeeled apples and candied fruit. Add cider, bring to a boil and simmer, uncovered, for 15 minutes or until fairly dry. Add sugar, salt and spices and simmer 10-15 minutes longer, until thick. Stir in whiskey or brandy and rum or sherry to taste. Can be used at once. If you want to can it, pack into sterilized jars, adjust lids and process in hot water bath for 1 1/2 hours. Seal and use as needed. Okay, here are my "notes". I used the cuisinart; it's on the counter and the food grinder is stashed somewhere, never to be seen again :) I used golden and dark raisins, currants aren't easy to find and are usually hard as rocks from sitting on the shelf for years. I don't think the candied fruit peels are necessary, if you don't like or can't find them. Recipe says it makes enough for 3 to 4 nine inch pies, but I made one rather full 10 inch pie and had just about a cupful leftover. If you don't care to use any alchohol, grape ju
