Vanilla Cream And Strawberries

Ingredients:

2 cups whipping cream
3/4 cup sugar
1 package unflavored gelatin
1/3 cup cold water
1 1/2 cups sour cream
1 teaspoon vanilla
1/4 cup orange juice -- frozen concentrate, thawed
1/2 cup amaretto -- optional
 

Preparation:

Heat cream in medium saucepan over low heat til warm, not hot. Gradually add sugar and stir til dissolved, about 4 minutes. Remove from heat. Soften gelatin in cold water in small saucepan. Bring to boil, stirring to dissolve gelatin. Blend into cream and sugar mixture. Cool 5 minutes. Place sour cream in a large bowl. Gradually add gelatin mixture, beating with wire whisk until smooth. Stir in vanilla. Pour mixture into ungreased 4-5 cup ring mold. Cover and refrigerate overnight. Shortly before serving time, rinse and hull berries, cut into thick slices or leave whole. Toss with juice conentrate and liqueur and chill. To serve, unmold ring onto serving plate, fill center with drained beteties and garnish with mint leaves, if desired. This dessert is cool, elegant, and not "too" sweet. Just the thing for an elegant spring dinner!
