Cherries Jubilee

Ingredients:

16 ounces pitted sweet cherries -- undrained
1 can water
1/3 cup sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1/3 cup brandy -- (optional)
1 package ice cream or cake a la mode
 

Preparation:

1. Drain cherries, reserving juice; add water to make 1 cup liquid. 2. In small saucepan, mix together sugar and cornstarch; gradually stir in cherry juice until smooth. 3. Bring to a boil over medium heat, stirring constantly; boil 1 minute. 4. Add cherries and lemon juice; keep warm. 5. Just before serving, add brandy, if desired, and ignite. After flame dies down, spoon over ice cream or cake a la mode.
