Tater-Dipped Veggies

Ingredients:

1 cup instant mashed potato flakes
1/3 cup grated parmesan cheese
1/2 teaspoon celery salt
1/4 teaspoon garlic powder
1/4 cup butter or margarine -- melted/cooled
2 large eggs
4 cups raw bite-size vegetables -- your choice (to 5)
1 medium peppers
1 medium mushrooms
1 medium broccoli cauliflower
1 medium cauliflower
1 medium zucchini
1 package parboiled carrots
1 package prepared ranch salad dressing or ranch dip
 

Preparation:

In a small bowl, combine potato flakes, Parmesan cheese, celery salt, garlic powder and butter. In another bowl, beat eggs. Dip vegetables, one at a time, into egg, then into potato mixture; coat well. Place on an ungreased baking sheet. Bake at 400 F. for 20-25 minuutes. Serve with dressing or dip if desired.
