Garlic-Chive Mashed Potatoes

Ingredients:

4 1/2 cups cubed peeled yukon gold potatoes or baking potato -- 1 1/2 pound
6 cloves garlic -- peeled
2/3 cup 1% low-fat milk
1/2 cup plain low-fat yogurt
1/2 teaspoon salt
1/4 cup chopped fresh chives
1 whole chives -- optional
 

Preparation:

1. Place cubed potato and garlic in a large saucepan, and cover with water; bring to a boil. Reduce heat, and simmer 15 minutes or until tender; drain well. 2. Return potato and garlic to saucepan. Add milk, yogurt, and salt; beat at medium speed of a mixer until mixture is smooth. Add chopped chives, and stir well. Garnish with whole chives, if desired.
