Preparation:
Steam potatoes until tender, about 20 minutes. Test with a fork. Mash adding butter, milk, seasoning to taste, then egg yolks. Try not to allow potatoes to cool very much. Spoon into heaping, rounded individual patties onto a buttered cookie sheet, or use a pastry bag to make spiraling puffs. Brush with egg and water mixture.
Brown until light golden under a broiler for about 5 minutes. Sprinkle with paprika and serve. |
