Oatmeal Carmel Nut Bars

Ingredients:

1 cup quick rolled oats
1 cup flour
2/3 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup vegetable oil
1/4 cup apple juice
1 jar caramel ice cream topping -- 8-10 oz
1/2 cup cashews -- chopped
 

Preparation:

Preheat oven to 325øF. Combine first 5 ingredients in a bowl. Mix with your hands until no lumps remain. Drizzle in oil and fruit juice and mix until evenly moistened and crumbly. Press all but 1/2 cup of mixture into a lightly oiled 9 x 13 inch baking dish. Spread caramel over top and sprinkle with reserved sugar mixture and nuts. Bake 30-40 minutes or until golden. Let cool partially before cutting into bars.
