Savory Meat Balls In Tomato Sauce

Ingredients:

1 pound lean ground beef
3 tablespoons cream of rice
1 teaspoon salt
1 dash pepper
1/2 teaspoon oregano -- crushed
1 cup beef broth or bouillon
2 teaspoons kitchen bouquet
1 can tomato sauce -- 8oz
 

Preparation:

Combine beef, cream of rice, salt, pepper, 1/4 teaspoon oregano and 1/4 cup beef broth. Mix gently but thoroughly and refrigerate about 20 minutes for ease in shaping into meat balls. With moistened fingers, shape inot 24 meat balls. In a large skillet, combine remaining beef broth and kithcen bouquet. Add meat balls and bring to a boil. Reduce heat, cover and cook 5 minutes. Turn meat balls, cover and cook 5 minutes longer. Skim any fat from broth and stir in tomato sauce and oregano. Heat. Serve with noodles, spaghetti or rice. Makes 4 servings.
