Chimicuurri Sauce

Ingredients:

3 cups red wine vinegar
4 cups olive oil
2 teaspoons dry mustard
5 cups onion
1/3 cup pitted green olive
3 cups parsley
1/3 cup scallion greens
1/2 cup garlic
1/3 cup brandy
1/4 cup dried oregano
1/3 cup pepper
1/4 cup cayenne
2 teaspoons kosher salt
 

Preparation:

combine vinegar, olive oil, and dry mustard in a food processor process until well blended add remaining ingredients and process until well blended cover and let stand for 4-8 hours, allowing flavors to meld or cover and chill up to 96 hours serve chilled or at room temperature, as a dipping sauce
