Low Fat Lazy Lasagne

Ingredients:

2 packages spinach
15 ounces low fat cottage cheese.
 

Preparation:

Then layer in a large pan: a few spoon fulls of jarred spaghetti sauce a layer of no bake lasagne noodles (actually, any lasagne noodles work fine too, but you need to cook a bit longer), a layer of filling, a bit of mozzarella cheese, repeat layers. Bake till noodles are tender and cheese is bubbly. If you feel like being really fancy you can use the same filling in stuffed shells or manicotti.
