Marinated Shrimp With Olives And Lemon

Ingredients:

1 tablespoon dry mustard
1 tablespoon red wine vinegar
2 tablespoons chopped roasted red pepper or pimiento
1 cup pitted black olives or greek olives -- well drained
1 piece bay leaf -- crumbled
1 dash cayenne pepper to taste
1 tablespoon salt -- or to taste
1/4 cup vegetable oil
1/2 cup fresh lemon juice
1 medium lemon -- thinly sliced
2 cloves garlic
2 tablespoons chopped fresh parsley
1 medium red onion -- thinly sliced
1 1/2 pounds cooked medium or large shrimp -- (1 1/2 to 2)
 

Preparation:

In a medium glass or plastic bowl, stir together oil, garlic, dry mustard, salt, lemon juice, vinegar, bay leaf, and cayenne. Stir in lemon slices, onion slices, olives, pimiento, and parsley. Add shrimp, tossing to coat. Refrigerate covered for at least 1 hour. Serve from a decorative glass bowl with frilly toothpicks or individual dishes with forks.
