Hawaiian Pork Chops

Ingredients:

2 teaspoons oil
8 chops pork chops
2 tablespoons fats and oils reserved from sauteing pork chops
1 cup pineapple chunks -- canned
4 teaspoons cornstarch
1 teaspoon salt -- to taste
1 teaspoon black pepper -- to taste
1/4 cup brown sugar
1 cup pineapple juice -- reserved from chunks
1/2 cup lemon juice
 

Preparation:

Brown pork chops in a little oil. Drain off all but measured amount of fat from browning the chops. Brown the chopped onion in the remaining fat. Layer pork chops in big fry pan or Dutch oven. Mix the rest of the ingredients together. Add to onion mixture and cook until thickened. Pour over the pork chops. Bring to boil and then simmer until meat is very tender, about 2 hours. Serve over rice. Use the juice from the pineapple chunks. If there is not enough, add water or use a small can of pineapple juice.
