Caribbean Grilled Pork Chops With Summer Fruit Salsa

Ingredients:

1 jar summer salsa
3 cups diced fresh fruit -- (2 large nectarines,apricots, peaches)
1 small red onion -- diced
1 tablespoon chopped fresh cilantro
1 medium orange -- peeled, sectioned and chopped
2 tablespoons canned or fresh diced jalapenos -- or to taste
1/2 teaspoon salt or to taste
4 chops center cut pork chops -- 3/4 to 1-inch thick
2 teaspoons ground cumin
1 teaspoon salt or to taste
1/2 teaspoon freshly ground pepper
 

Preparation:

To make salsa, mix all salsa ingredients in a medium bowl. Refrigerate until used or up to 8 hours. Trim fat from chops. In a small bowl, mix cumin, salt and pepper. Rub on both sides of chops. Grill or broil 3 to 4-inches from coals or heating element for 3 to 4 minutes per side or until cooked to desired doneness. Serve with salsa. Prep Time: 20 minutes Cook Time: 6-8 minutes Makes: 4 servings A spicy cumin rub on the pork is balanced by the sweetness of the fruit in the salsa. To save time, use a food processor to coarsely chop the salsa. Serve with green beans and rice or couscous.
