Preparation:
In 3-quart saucepan cook potatoes, covered, in 2 inches boiling water 10 to 12 minutes, just until tender. Drain and cool. Meanwhile, prepare Lime Vinaigrette. Add potatoes and remaining ingredients to vinaigrette. Toss gently to mix thoroughly.
LIME VINAIGRETTE In large bowl whisk vegetable oil, bottled or fresh lime juice, bottled mild jalapeno sauce*, chili powder and salt.
* You can substitute 1 to 1 1/2 teaspoons hot pepper sauce and 1 1/2 tablespoons water for the jalapeno sauce. |
