Nantucket Lobster Salad

Ingredients:

1 pound new england lobster meat
1 stalk celery -- sliced
1 medium carrot -- shredded
1/2 medium onion -- diced
3/4 cup mayonnaise*
 

Preparation:

*Mayonnaise preferably home made, but Hellman's or Best Foods will do. Cut the lobster into largish 3/4-inch chunks. If there is juice present, reserve it and add as much as you can at the end without the mixture turning soupy. Mix all ingredients in a bowl with your hands. Serve on red leaf lettuce, or in a fresh French roll as a sandwich. About 4 serving
