Crab-Rice Salad

Ingredients:

3 cups cooked rice
1 pound crabmeat
1 cup celery
1 cup water chestnuts
1/3 cup scallions
1/4 cup plain yogurt
1/4 cup sour cream
3 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon cayenne
8 medium bibb lettuce
4 medium tomato
 

Preparation:

Combine rice, crab, celery, water chestnuts, and scallions-toss gently to mix well combine yogurt, sour cream, lemon juice, salt, and cayenne-mix well pour over rice mixture-toss gently to mix well arrange lettuce leaves onto chilled salad plates spoon rice mixture onto lettuce leaves garnish with tomato wedges serve chilled
