Apple-Beet Salad

Ingredients:

2 cups shredded or chopped apple -- unpeeled (granny smith work well)
15 ounces whole beets
3/4 cup sliced celery
1 tablespoon lemon juice
1 tablespoon honey
1 bunch lettuce leaves
3 tablespoons chopped walnuts -- toasted
 

Preparation:

Combine all ingredients except the lettuce leaves and walnuts, tossing gently. Spoon out each serving onto lettuce leaves and sprinkle with walnuts to serve. 6 servings/Serving size: 1/2 cup
