Pasta Lombardi

Ingredients:

1 pound pasta
1 ounce black olives
2 ounces grated cheese
2 ounces celery
2 ounces italian tomatoes
1 teaspoon salt and pepper
2 ounces cubed onion
1 ounce mushrooms
3 ounces eggplant
1 ounce green olives
1 ounce olive oil
2 ounces capers
 

Preparation:

SAute eggplant, onions and celery separately in olive oil until soft. Drain all liquid and put these vegestables together in one pan. Add olives, mushrooms, capers and tomatoes, cook for 10 minutes longer. Add all ingredients to cooked pasta and complete with cheese, salt and pepper to taste/
