ORECCHIETTE PUGLIES

Ingredients:

10 1/2 ounces orecchiette pasta
14 ounces turnip tops
3 fillets anchovy fillets crushed with a fork
1 teaspoon red chili pepper
1 clove garlic
2 tablespoons olive oil
1 teaspoon salt.
 

Preparation:

1) Clean and wash the turnip tops. Keep the tops and the most tender leaves. Boil them in salted water for 15 minutes. 2) Drain the turnip tops and keep the cooking water, filter it, add some other water, salt and cook pasta in it. 3) Brown garlic in 3 tbsp oil, remove it and add chili pepper and anchovies. After a few minutes, add the turnip tops, blend and saute over high heat for 5/6 minutes. 4) Drain pasta and season with the turnip sauce.
