Bon Appetit VEGETARIAN CHILI WITH CHIPOTLE CHILIES

Ingredients:

1 Cup Chopped carrots
1 Cup Chopped red or green bell pepper
1 Cup Chopped onion
3 cloves Garlic, minced
1 tablespoons Chili powder
2 teaspoon Ground cumin
28 ounces italian plum tomatoes with juice, chopped
15 ounces red kidney beans, drained
15 ounces cannellini beans, drained
15 ounces black beans, drained
2 tablespoons Canned chopped chipotle chilies in adobo sauce
 

Preparation:

You guys can figure out the rest. Cook for 30 minutes, stirring, and add salt and pepper. I omited 1 T. oil at the beginning of this recipe- it was used to saute the vegetables.
