Pasta With Blackened Shrimp

Ingredients:

5 tablespoons olive oil
2 bunches green onions -- chopped
1 clove garlic
4 medium tomatoes -- chopped fine
1 pound small shrimp -- peeled uncooked cajun blackening spice
2 cups cooked pasta -- of your choice of shells
1/4 cup chopped fresh cilantro -- or parsley
 

Preparation:

1. Heat 2 tablespoons of the oil in a skillet over medium heat. Add the green onions and garlic and saute until golden. Add the tomato and cook just until the tomato softens (it should remain chunky). 2. Coat the shrimp with Cajun spice. Heat 3 tablespoons of oil in a black iron skillet to very hot. Add the shrimp and quickly cook shrimp just until tender (2 to 3 minutes). 3. To serve, pour the tomato sauce over the pasta, add shrimp on top of the sauce, and sprinkle cilantro or parsley over the shrimp.
