Apple Chick Pea Saute

Ingredients:

3 medium onions
3 stalks celery
1 medium granny smith apple
19 ounces chick peas -- (garbanzo beans),
10 ounces fresh raw spinach -- rinsed and drained
1 tablespoon rosemary leaves -- crushed
1/3 cup lemon juice
1 teaspoon salt -- to taste
1 cup canola oil -- for sauteeing
1 cup white grape juice
 

Preparation:

Use a large fryer with a dome lid to ensure room for spinach. Dice onions and celery and saute in a small amount of canola oil over low heat. Do not skin the apple, but dice it. When the onions are transparent, add apple, spinach, lemon juice, grape juice, rosemary and salt. Stir gently to mix the seasoning. Cover tightly and continue cooking until the spinach is soft and bright green. Serve immediately. This is an excellent low-fat vegan dish and is high in fiber. pb's notes: This recipe takes variations well. Quite quick. Quite easy. Quite good! Variation: replace garbanzos with Great Northern beans replace white grape juice with apple juice use apple of choice or try dried apples Making use of items on hand, I used Great Northern beans, apple juice, and a Delicious Apple.
