Preparation:
Mix shorting, sugar, egg and vanilla, until creamy. Then, mix in pineapple. Sift together flour, baking powder, soda and salt. Then, add it to pineapple mixture. Drop by teaspoonfulls, 2 inches apart, onto an ungreased cookie sheet. Bake in a 325 preheated oven, for 11 minutes, or until tops are brown. Transfer to a cookie rack, and allow to fully cool. Makes 2 dozen. |
