Preparation:
Preheat oven to 350 F. Lightly spray a cookie sheet with nonstick
cooking spray. Beat together sugars and butter until well blended. Add
next 4 ingredients and beat well. Combine flour and next 4 ingredients
in another bowl. Stir into sugar mixture. Stir in oatmeal and raisins
and mix well. (Dough will be moist.) Drop by rounded tablespoonfuls
onto prepared cookie sheet. Bake 10-12 minutes or until edges are
light golden brown. Cool 1 minute on cookie sheet and remove to wire
rack. Cool completely. Store in tightly covered container. Easy Bar
Cookies: Spread dough evenly onto bottom of an ungreased 13x9 inch
baking pan. Bake 25-30 minutes or until edges are light golden brown.
Cool completely and cut into bars. Store tightly covered.
Because this recipe is for a particular
size pan, it adjusts the number of servings only in multiples of
