Garlic Shrimp With Sauteed Red Peppers

Ingredients:

1/4 cup olive oil
10 cloves garlic -- peeled, thinly sliced
1 1/2 pounds rock shrimp -- peeled, deveined
1 tablespoon chili powder
1 jar roasted red bell peppers -- (7 ounces) drained, chopped
1 bottle clam juice -- (8 ounces)
2 tablespoons fresh lime juice
1/4 cup chopped fresh parsley
 

Preparation:

Heat oil in heavy large skillet over medium heat. Add garlic and saute until tender but not brown, about 4 minutes. Using slotted spoon, transfer to paper towels. Season shrimp with salt and pepper. Add to skillet and stir until almost cooked through, about 3 minutes. Using slotted spoon, transfer to paper towels and drain. Add chili powder to skillet and stir 1 minute. Add bell peppers and clam juice to skillet. Boil 5 minutes. Return garlic and shrimp to skillet and stir until heated through, about 2 minutes. Stir in lime juice and parsley.
