Pumpernickel Bread



Pumpernickel rye bread also has many variations, depending on the relative amounts of wheat flour, rye flour and pumpernickel flour used. Authentic pumpernickel flour consists of coarsely-ground, whole-grain rye (known as rye meal or pumpernickel rye meal) with added caramel or molasses for flavor and coloring. Traditional German pumpernickel is made largely from pumpernickel flour, but many American types contain considerable wheat flour.
